Manakish with Zatar Recipe

Manakish with Zatar: Recipe to bake at home
Ingredients for the flatbread (Manakish) with Za'atar:
500 g flour
1 tsp salt
2 tsp/5g dry yeast
4 tsp Olive oil
1 tsp sugar
1-2 tbsp Zatar
250 ml lukewarm water
Additionally, a little oil for coating.
1) Mix 30ml of lukewarm water with the yeast until the yeast has dissolved.
2) Sift the flour, sugar, and salt into a bowl. Add the water with the yeast and begin kneading with the remaining water.
3) Then add 1 tablespoon of olive oil and knead the dough well again. Place the dough in a bowl and cover it well. Then let it rise for about 2 hours.
4) Remove the dough and shape it into small balls. If it's too sticky, add a little more flour. Flatten the balls with the palm of your hand and shape them into round discs (about 3 mm thick). Press small indentations into the dough with your fingertips. Place the finished discs side by side on a baking sheet lined with parchment paper.
5) Place the za'atar in a small bowl, add the remaining olive oil and a pinch of salt if desired, and mix well. Then spoon the za'atar-olive mixture onto the flatbreads. Preheat the oven to approximately 200°C (390°F). Bake the flatbreads for about 15 minutes, or until golden brown.
Enjoy the Manakish with Zatar warm with a cup of tea.
