Maamoul Date Cookies Recipe

Maamoul Date Cookies Recipe – Delicious date pastries for a touch of the Orient
Recipe idea for 24 cookies
Ingredients:
- 250 g butter
- 300 g whole wheat flour
- 4 tablespoons rose water
- 250 g pitted Medjool dates (alternatively: date paste)
- 100g chopped almonds
- 60 g Walnut kernels
- 1 pinch of Ceylon cinnamon powder
- 1 organic vanilla bean
- 1 pinch of sea salt
Preparation:
- First, a shortcrust pastry is prepared.
To make this, knead the butter with the flour and rosewater until you have a crumbly dough. Then cover it with cling film and refrigerate for at least 1 hour.
- Now remove the pits from the dates and dice them very finely. Then put the dates, along with the finely chopped almonds, walnuts, cinnamon powder, and the seeds from the organic vanilla bean, into a high-powered blender. Blend everything into a sticky paste. You can add two tablespoons of water and a pinch of sea salt if needed.
- Then take the dough out of the refrigerator and shape it into a roll on a floured work surface. Now cut it into 1-cm-wide slices using a kitchen knife.
- Roll each small round out into a circle and place 1 teaspoon of the date-nut mixture on each one. Then fold the shortcrust pastry rounds in half and seal the edges firmly.
- Then bake the date cookies in the oven for a quarter of an hour at 200 degrees Celsius using top and bottom heat.
- Let the cookies cool for 10 minutes.
- Enjoy your Maamoul date cookies with a glass of coffee or tea.
